SOUS CHEF COLD KITCHEN
- Responsible for assisting in supervising food preparation and prodcution for the cold kitchen section, as per set standards and procedures while ensuring adherence to the menu specification and hygiene and safety standards.
- Ensure that all assigned production staff carry out their duties in a set time frame.
- Ensure that assigned staff receive and follow given recipes and methods, wastage is kept to a minimum.
- Monitor regular standards of production to ensure highest level of quality.
- Perform daily inspection on all kitchen, cold rooms, food storage rooms and equipment.
- Maintain an accurate stock rotation and manage on time deliveries.
- At least three year’s experiences in quality establishments along with excellent culinary skills.
- Minimum Diploma III hospitality or catering management or equivalent qualification.
- Cold kitchen experience in either a hotel, resort or quality restaurant (preferably with an airline company).
- Must be detail oriented and able to manage competing priorities and multiple deadlines in a fast paced environment.
- Ability to easily adapt to organizational and environmental changes.
- Excellent communication skills, both written and verbal.
