  1. Oversees and directs all aspects of the kitchen operation, providing functional assistance and direction, and coordinates functions and activities.
  2. The Pastry Chef is accountable for the quality and consistency of all pastry products produced and served including the efficiencies, consistency, associate training and accountability of cost associated with the pastry department.
  3. The Pastry Chef work directly with the Executive Sous Chef on the creation, development and implementation of new desserts and creative menu development.
  4. Ensures that all food products prepared meet the established specifications and standards.
  5. With a “Hands on Approach” assigns tasks effectively for the efficient use of allocated labor ensuring maximum results are achieved and daily production needs have been met in a timely, organizes and efficient manner.
  6. Seeks to maintain knowledge of industry trends in the world of pastry.
  7. Facilitates all health, safety, sanitary rules, regulations and standards according to health department and risk management are enforced and followed correctly.
  8. Other duties as assigned.


  1. Minimum of three (3) year’s progressive experience in the Pastry Department within a Hotel, Resort, Restaurant or InFlight Catering Operation.
  2. Two year’s as a Sous Chef Pastry in a high volume, multi-outlet hotel/restaurant/InFlight Catering with centralized pastry production kitchen.
  3. Ablity to present at work for assigned schedule including, nights, weekends, holidays and extenden hours when required.
  4. Fully competent in all aspects of pastry.
  5. Proficiency with English, strong oral and written communication skills.
